Kitchen Manager

Purpose of Position

The kitchen manager directs the overall food service operation of the camp, including menu planning, purchasing, nutrition, preparation, service, sanitation, personnel management, customer service, and record keeping. The kitchen manager must work as part of the Food Service team, ensuring that nutritious and attractive meals are prepared and served to campers and staff, as well as part of the overall Camp Staff team. The kitchen manager must also maintain the kitchen in a sanitary manner according to state health regulations and standards.

General Responsibilities

The general responsibilities of all staff members are listed under Nebraska 4-H Camp s Personnel Policies and Procedures.

Specific Responsibilities

50% Oversee and carryout the planning, preparation, and service of meals, snacks, and food needed for programs Plan, direct, and supervise the camp food service operation.

Create menu for each session, following USDA nutrition guidelines.

Supervise and aid kitchen staff, including part-time employees and seasonal employees in the preparation of all meals. Ensure the service of camp meals through directing the work of other kitchen employees.

Ensure high safety and health standards in compliance with the rules and regulations of the Nebraska Health Department, American Camp Association, and specific 4-H Camp operating policies and procedures

Work with health care personnel in accommodating special dietary needs of camp visitors and guests.

Work with program and administrative staff in accommodating special food service arrangements, such as banquets, off site tripping menus, cookouts, etc.

Maintain current food handling certification, such as ServSafe certification

20% Oversee the inventory and ordering of food, equipment, and supplies

Maintain current inventory of all food and household supplies within budget or with the approval of the Camp Director.

Rotate food as necessary and change menus to avoid food spoilage

Order food and household supplies consistent with menu, budget, and enrollment counts

Annually review and analyze food costs, kitchen payroll to determine the cost per meal, inventory supplies, and kitchen equipment.

15% Oversee routine maintenance, sanitation, and upkeep of the camp kitchen, its equipment, and facilities

Maintain high standards of cleanliness, sanitation, and safety

Clean and maintain all food-service areas, including kitchen, dining hall, storage, compost, and kitchen recycling

Inspect equipment and ensure equipment is repaired as necessary

Promote practices that seek to reduce waste, reuse items, and recycle as much as possible.

Oversee and participate in daily cleaning routines.

10% Manage administrative functions with regard to kitchen employees.

Maintain kitchen food service budget with help from the Camp Director

Monitor kitchen staff employee performance and training

Hire, train, and coordinate food service employees with the help of the Camp Director

Supervise the work of kitchen staff

Responsible for daily scheduling and training of kitchen employees

Provide ongoing feedback and guidance to kitchen staff

Provide recommendations and report concerns to Camp Director

Complete mid-summer and end-of-summer evaluations of kitchen staff

Maintain current and accurate records of all camp food inventories and use. From these records food costs per camper per week can be calculated (and adjusted if necessary) and appropriate food orders can be prepared

5% Other Duties

Set the tone in the kitchen for work ethic and high level of quality

Opens the kitchen prior to camp, necessary cleaning and organization for pre-camp Health Department inspection

Attends all training and staff meetings before and during the camp season

Adheres to all University of Nebraska- Lincoln policies and procedures

Observes all safety precautions and compiles with all Nebraska 4-H health and safety rules and procedures

Maintains open communication with all camp staff members, including leadership staff

Portray a positive and friendly attitude when working with the public, vendors, and camp visitors.

Abide by the 4-H Code of Conduct

Set a positive example for all members of our community including cleanliness, punctuality, manners, etc.

All other duties as assigned by Camp Director

Job Types: Full-time, Temporary

Salary: $14.00 to $16.00 /hour
